There are strains of unicellular \u201cmicroalgae\u201d that can be used for biomass or precision fermentation processes.<\/span><\/p>\n<h2 dir=\"ltr\"><span style=\"font-size: 12pt;\">Alternative proteins<\/span><\/h2>\n<p dir=\"ltr\"><span style=\"font-size: 12pt;\">An often-used umbrella term for proteins produced either from animal cells or plants or through fermentation.\u00a0<\/span><\/p>\n<h3 dir=\"ltr\"><span style=\"font-size: 12pt;\">Bacteria<\/span><\/h3>\n<p dir=\"ltr\"><span style=\"font-size: 12pt;\">Microscopic unicellular organisms are found almost everywhere. Certain strains of bacteria are used in precision fermentation processes to produce target cells for functional ingredients.<\/span><\/p>\n<h3 dir=\"ltr\"><span style=\"font-size: 12pt;\">Biomass fermentation<\/span><\/h3>\n<p dir=\"ltr\"><span style=\"font-size: 12pt;\">A process to produce high quantities of a specific microorganism. The microorganisms that grow and multiply during fermentation are themselves the ingredients that are \u201charvested\u201d and used in food and beverage production. Also referred to as \u201csingle-cell production.\u201d<\/span><\/p>\n<h3 dir=\"ltr\"><span style=\"font-size: 12pt;\">Bioreactor<\/span><\/h3>\n<p dir=\"ltr\"><span style=\"font-size: 12pt;\">A vessel that provides a controlled environment where living cells or enzymes can convert raw materials into products. Bioreactors are a key piece of equipment in biomass and precision fermentation processes as well as in meat cultivation.<\/span><\/p>\n<p dir=\"ltr\"><span style=\"font-size: 12pt;\">Cellular agriculture<\/span><br \/>\n<span style=\"font-size: 12pt;\">The production of agricultural (mainly animal-sourced) products from cell culture \u2013 a method to make foods that conventionally are animal-derived, but without involvement from those animals.<\/span><\/p>\n<h3 dir=\"ltr\"><span style=\"font-size: 12pt;\">Cultivated meat<\/span><\/h3>\n<p dir=\"ltr\"><span style=\"font-size: 12pt;\">A process whereby meat (muscle and fat) is grown directly from cells. Examples of these are fruit juices, energy drinks, and beverages with health benefits.<\/span><\/p>\n<h2 dir=\"ltr\"><span style=\"font-size: 12pt;\">Fermenter<\/span><\/h2>\n<p dir=\"ltr\"><span style=\"font-size: 12pt;\">A vessel that carries out the fermentation process by utilizing microorganisms. See also bioreactor above.<\/span><\/p>\n<h3 dir=\"ltr\"><span style=\"font-size: 12pt;\">Filamentous fungi<\/span><\/h3>\n<p dir=\"ltr\"><span style=\"font-size: 12pt;\">Fungi that grow as thread-like filaments (the word \u201cfilamentous\u201d basically means \u201cthread-like\u201d). Filamentous fungi is used in the production of fermented foods and is, for example, the source of dietary proteins, lipids, and vitamins.<\/span><\/p>\n<h3 dir=\"ltr\"><span style=\"font-size: 12pt;\">Filtration<\/span><\/h3>\n<p dir=\"ltr\"><span style=\"font-size: 12pt;\">A physical separation process that separates solid matter from fluid. In food production, the aim of filtration is to minimize contamination by removing impurities and to protect the taste and quality of the product. In fermentation processes, it can also be used to concentrate the microbial biomass after fermentation.<\/span><\/p>\n<h3 dir=\"ltr\"><span style=\"font-size: 12pt;\">Flexitarians<\/span><\/h3>\n<p dir=\"ltr\"><span style=\"font-size: 12pt;\">People who do not keep strict vegan or vegetarian diets but from time to time choose plant-based, fermented, or cultivated alternatives over conventional, animal-based food products. This consumer group is likely to continue to grow, both in numbers and importance.<\/span><\/p>\n<h3 dir=\"ltr\"><span style=\"font-size: 12pt;\">Fungi<\/span><\/h3>\n<p dir=\"ltr\"><span style=\"font-size: 12pt;\">Eukaryotic organisms (organisms whose cells contain a nucleus). There are strains of fungi that can be used for biomass or precision fermentation processes.<\/span><\/p>\n<h2 dir=\"ltr\"><span style=\"font-size: 12pt;\">Future foods<\/span><\/h2>\n<p dir=\"ltr\"><span style=\"font-size: 12pt;\">Another term for \u201cNew Foods\u201d (see below)<u>.<\/u><\/span><\/p>\n<h3 dir=\"ltr\"><span style=\"font-size: 12pt;\">Genetically modified food\u2014GMOs and GMMs<\/span><\/h3>\n<p dir=\"ltr\"><span style=\"font-size: 12pt;\">Genetically modified organisms (GMOs) and genetically modified microorganisms (GMMs) can be defined as organisms in which the genetic material (DNA) has been altered in a way that does not occur naturally. Heme proteins contribute to the appearance, taste, and mouthfeel of beef products. Precision fermentation is used to create heme-based ingredients that are added to plant-based mince products.<\/span><\/p>\n<h3 dir=\"ltr\"><span style=\"font-size: 12pt;\">Lab-grown meat<\/span><\/h3>\n<p dir=\"ltr\"><span style=\"font-size: 12pt;\">Another term for \u201ccultivated meat\u201d (see above).<\/span><\/p>\n<h3 dir=\"ltr\"><span style=\"font-size: 12pt;\">Lipids<\/span><\/h3>\n<p dir=\"ltr\"><span style=\"font-size: 12pt;\">A broad group of molecules, which includes fats, oils, hormones, and waxes.<\/span><\/p>\n<h3 dir=\"ltr\"><span style=\"font-size: 12pt;\">Meat analogues<\/span><\/h3>\n<p dir=\"ltr\"><span style=\"font-size: 12pt;\">A substitute or alternative to meat \u2013 a food product made from vegan or vegetarian ingredients. Meat analogues typically have similar qualities\u2014e.g., mouthfeel, taste, and appearance\u2014as a particular meat product.<\/span><\/p>\n<h3 dir=\"ltr\"><span style=\"font-size: 12pt;\">Microorganisms<\/span><\/h3>\n<p dir=\"ltr\"><span style=\"font-size: 12pt;\">Microscopic organisms. Microorganisms like yeast and bacteria carry out fermentation processes to produce beer, yogurt, cheese, and other types of food.<\/span><\/p>\n<h2 dir=\"ltr\"><span style=\"font-size: 12pt;\">Mycoprotein<\/span><\/h2>\n<p dir=\"ltr\"><span style=\"font-size: 12pt;\">A broad term for proteins derived from filamentous fungal biomass. Mycoproteins come in many forms, ranging from powders to wet-paste-like structures and chunks.<\/span><\/p>\n<h3 dir=\"ltr\"><span style=\"font-size: 12pt;\">Multicellular<\/span><\/h3>\n<p dir=\"ltr\"><span style=\"font-size: 12pt;\">Having, or consisting of, multiple cells.<\/span><\/p>\n<h2 dir=\"ltr\"><span style=\"font-size: 12pt;\">New Foods<\/span><\/h2>\n<p dir=\"ltr\"><span style=\"font-size: 12pt;\">A term broadly referring to any food ingredient that lacks an established history of human consumption or ingredients made from innovative new processes. Also referred to as \u201cnovel foods.\u201d Precise legal definitions vary from region to region.<\/span><\/p>\n<h3 dir=\"ltr\"><span style=\"font-size: 12pt;\">Novel foods<\/span><\/h3>\n<p dir=\"ltr\"><span style=\"font-size: 12pt;\">Another term for \u201cNew Foods\u201d (see above<u>)<\/u>.<\/span><\/p>\n<h3 dir=\"ltr\"><span style=\"font-size: 12pt;\">Precision fermentation<\/span><\/h3>\n<p dir=\"ltr\"><span style=\"font-size: 12pt;\">A process where microorganisms are \u201cprogrammed\u201d to produce specific target proteins, fats, or other compounds. Rennet has the ability to coagulate milk. Animal rennet was originally extracted from the fourth stomach of a calf, but today it is more common to use non-animal rennet produced through precision fermentation. Rennets are available in liquid and dried form.<\/span><\/p>\n<h3 dir=\"ltr\"><span style=\"font-size: 12pt;\">Single-cell production<\/span><\/h3>\n<p dir=\"ltr\"><span style=\"font-size: 12pt;\">Another term for \u201cbiomass fermentation\u201d (see above).<\/span><\/p>\n<h3 dir=\"ltr\"><span style=\"font-size: 12pt;\">Sustainable food systems<\/span><\/h3>\n<p dir=\"ltr\"><span style=\"font-size: 12pt;\">According to the Food and Agriculture Organization of the United Nations, a sustainable food system is one that is economically, socially, and environmentally sustainable.<\/span><\/p>\n<h3 dir=\"ltr\"><span style=\"font-size: 12pt;\">Unicellular<\/span><\/h3>\n<p dir=\"ltr\"><span style=\"font-size: 12pt;\">Having, or consisting of, a single cell.<\/span><\/p>\n<h3 dir=\"ltr\"><span style=\"font-size: 12pt;\">Value-added beverages<\/span><\/h3>\n<p dir=\"ltr\"><span style=\"font-size: 12pt;\">Beverages that have been enhanced to become more valuable by providing specific benefits to consumers. See also \u201cenriched beverages\u201d above.<\/span><\/p>\n<h3 dir=\"ltr\"><span style=\"font-size: 12pt;\">Yeast<\/span><\/h3>\n<p dir=\"ltr\"><span style=\"font-size: 12pt;\">A single-celled organism that is naturally present in our environment.
